It’s been a while since I pulled out the old waffle machine I have sitting in my cupboard. Yesterday I wanted to make chocolate pancakes after sitting on Tumblr and seeing pictures of them, but then I decided to turn them into waffles instead. Hence my little Chocolate Waffles with Chocolate Sauce.
My waffle machine was actually a present to my sister on her 13th (or was it 12?) birthday, but I decided to go ahead and use it for my waffles. I love our waffle machine, because you can even cook pancakes on them and make them look like waffles, which is basically what I did. The waffle design is shaped like a five petal flower, but when you cut them up into individual pieces, they look like hearts. 
My waffle recipe is basically a pancake recipe, so if you don’t have a waffle machine like mine, you could always make pancakes out of them. I made a couple of pancakes since my four-year-old brother preferred pancakes over waffles. These go great with a scoop of ice cream or whipped cream as it balances out the overwhelming chocolate flavour. It’s slightly dense and rich, rather than light and fluffy, so beware!
Chocolate Waffles with Chocolate Sauce
Ingredients
Waffles
1 cup plain flour
1 tsp baking powder
1/4 cup cocoa powder
1/4 cup caster sugar
pinch of salt
1 egg
1 tsp vanilla essence
3/4 cup milk 
Chocolate Sauce
1/4 cup dark chocolate (or milk, depending on your taste)
1/2 cup thickened cream
Method
In a medium sized bowl, place sifted flour, cocoa powder, baking powder, caster sugar and salt and mix to combine. Make a well in the centre and set aside.
In another bowl, whisk together the egg, milk and vanilla essence, then pour into the centre of the dry ingredients. With a wooden spoon, mix ingredients until combined and no lumps are visible.
Cook waffles according to machine instructions. Alternatively, place a non-stick pan over medium heat and grease with butter or cooking oil spray. Spoon roughly 1/3 cup of batter into the pan and cook on both sides to make pancakes.
To make chocolate sauce: Place chocolate and cream in a small saucepan and place over medium heat. Stir until chocolate is melted and combined with cream to create a smooth sauce. Remove from heat and allow to cool, stirring occasionally.
Serve waffles/pancakes with a scoop of vanilla ice cream. Drizzle some chocolate sauce over the top.
